Ambee Coffee Co. is building its first full-scale bakery in Flemington, New Jersey, located at 100 Reaville Avenue, Flemington, NJ, with a planned opening in late summer 2026.
There are moments in a company’s journey that feel different. Opening Ambee Bakery in Flemington marks one of those moments for us
Not just expansive.
Not just exciting.
Transformational.
What began nearly a decade ago as cold brew poured at farmers’ markets has evolved into something much larger.
For Ambee, this is about ownership, transparency, and raising our standards even higher.
Why Opening a Bakery in Flemington, New Jersey Matters
Since the beginning, Ambee has operated from a simple belief:
Because we care about what we consume and how it impacts the earth, we create organic coffee, tea, and wholesome food that nourish both people and the planet.
Our commitment to organic sourcing and sustainability has always guided our coffee program. Every cup of our organic coffee and tea reflects careful sourcing decisions, environmental responsibility, and an intention to do better.
As we’ve grown, we’ve felt a deeper responsibility to apply that same level of care and control to our food program.
For years, we partnered with talented local bakeries to supply our cafes. Those partnerships helped us grow. But growth also brought new clarity: if we truly believe in ingredient integrity and transparency, we need to control more of the process ourselves.
Hunterdon County has one of the highest concentrations of working farms in New Jersey. That agricultural density matters to us.
As we build out Ambee Bakery, proximity to local farms creates real opportunity. It allows us to source seasonally, experiment with regionally grown ingredients, and build relationships directly with producers who care about the land as much as we do.
From fruit and dairy to grains and specialty crops, the surrounding agricultural community supports the kind of seasonal, transparent baking program we envision.
For a company built on organic coffee and tea and a belief in responsible sourcing, being embedded in one of New Jersey’s most agriculturally rich counties is not incidental.
It’s Intentional.
Opening a dedicated Flemington, New Jersey, bakery allows us to do exactly that.
From Cafe to Craft Bakery
Our Flemington location will be centered around Ambee Bakery, with a smaller cafe front serving our signature organic coffee, tea, and wholesome food options you’ve grown to love.
The key difference between this Ambee and our other stores in New Jersey is that this space becomes the heart of our in-house baking program for all nearby locations.
That means:
This bakery represents a shift in how we operate.
“As we’ve grown, I’ve realized that if we truly believe in transparency and sustainability, we have to take responsibility for the foundation of what we serve. When you control your ingredients, you control your impact. Opening our own bakery is about raising our standards and building infrastructure that reflects our values.” – Steven Chiocchi CEO & Founder
By bringing baking in-house, we are strengthening our supply chain, protecting the integrity of our recipes, and reducing the vulnerability and volatility that comes with depending entirely on outside production.
We look at it as vertical integration with purpose.
Elevating Ingredients, Elevating Standards
At Ambee, we believe that food should be transparent.
When you enjoy a pastry alongside your organic coffee and tea, you should feel confident in what went into it. You should know that the flour, butter, fruit, and flavor combinations were chosen intentionally.
Bringing our bakery fully in-house also gives us the freedom to experiment.
Alongside high-quality traditional breads and pastries, we are expanding our commitment to innovation. We recognize the growing demand for gluten-free and vegan options that do not compromise on flavor, texture, or ingredient integrity.
Our goal is not simply to offer alternatives, but to develop baked goods that stand on their own – thoughtfully crafted, seasonally inspired, and rooted in the same standards that define our organic coffee and tea program.
The bakery becomes both a foundation and a test kitchen. A place where classic technique meets evolving dietary needs.
With our New Jersey bakery, we can:
This move allows us to refine our recipes, expand our seasonal offerings, and align every baked good more closely with our mission of sustainability and health-conscious consumption.
The Team Behind the Bakery
Great bakeries are built on craft.
We are proud to welcome Catherine, a French-trained baker, to join our team in Flemington. Her technical training and deep understanding of classic baking techniques bring a new level of precision and artistry to our program.
She joins Kristen, who has been instrumental in piloting Ambee Bakery out of our Warren location. Kris helped lay the foundation for what our in-house baking program could become.
Together, they represent a powerful blend of tradition and innovation.
Their work will shape the breads, pastries, and seasonal specialties that define this new chapter.
Sustainability at Scale
Opening a New Jersey bakery is not just about growth. It is about responsibility.
From the beginning, Ambee has believed that what we consume impacts both people and the planet. That philosophy does not stop at sourcing organic coffee and tea. It extends to how we build, operate, and invest in infrastructure.
The Flemington bakery is being designed with sustainability in mind from the ground up.
We are sourcing energy-efficient equipment and implementing operational practices that reduce overall energy consumption and waste. Through participation in programs like New Jersey’s Clean Energy Program (NJ CEP), we are prioritizing high-efficiency systems that lower environmental impact while strengthening long-term operational resilience.
This includes:
By building thoughtfully now, we reduce our footprint for years to come.
As we prepare to support future locations, including Bound Brook (Coming this Summer 2026) and beyond, this bakery becomes the sustainable backbone of our food program.
It is infrastructure built with intention.
It is growth aligned with responsibility.
Still Brewing. Now Baking.
Ambee will always be rooted in organic coffee and tea. That is where we began, and that commitment remains unchanged.
But coffee culture has always been about more than the cup. It is about gathering, nourishment, and shared experience.
With the opening of Ambee Bakery in Flemington, we are expanding that experience.
You will still find your favorite organic coffee and tea at the front of the cafe. But behind it will be something new: a full-scale bakery crafting breads, pastries, and seasonal offerings that reflect the same care we put into every roast and every brew.
This is not growth for the sake of growth.
It is a deliberate step toward building the kind of food system we believe in. One where quality is controlled. Ingredients are transparent. Sustainability is measurable. And community is central.
We started with cold brew at farmers’ markets.
Now we are building a New Jersey bakery designed to serve our community for years to come.
Still brewing.
Now baking.
And just getting started.
